For a Taste of Tunisia make this zippy relish that is used as a condiment for almost everything.
Harissa is the traditional accompaniment to couscous but will also enhance grilled or barbecued lamb and chicken. Make a paste (see pack for instructions) to use in fish or chicken dishes or to add pizazz to kebabs.
Harissa is great served as a dip with bread or small sausages (try adding a heaped tablespoon of chopped parsley). It also makes a delicious 'secret ingredient' in fillings for sandwiches and pita pockets.
