ANZAC Biscuit Recipe
Classic Kiwi ANZAC Biscuits!
ANZAC Biscuits are a Kiwi favorite. ANZAC Biscuits were first made by New Zealand women to send to their soldiers in World War One. Their associating with the Australian and New Zealand Army Corps earned these tasty biscuits their unusual name. Hearty, wholesome ANZAC Biscuits are perfect with a cup of tea or just by themselves.
Ingredients:
- 1 cup flour
- 1 cup uncooked rolled oats (plain oatmeal)
- 1 cup desiccated coconut
- 1 cup brown sugar
- 1/2 cup butter
- 2 generous tablespoons
Chelsea Golden Syrup
- 1 teaspoon baking soda
- 2 tablespoons boiling water
Combine the sifted flour, oats, coconut and sugar in a bowl. In a saucepan, melt together the butter and Chelsea Golden Syrup over a low heat. Mix together the baking soda and water and add to the Golden Syrup mix. Pour the Golden Syrup mix into the dry ingredients and stir well.
Spoon walnut-sized dollops of the mixture onto a greased baking tray, allowing room for spreading. Bake for 15-20 minutes at 180C / 350F then enjoy!
